Yummy Rice Krispie Treats

Last week was Valentine’s Day. Stores were filled with a lot of candy and chocolate for the event. Call me cheap, but I never fall for the Valentine’s Day trap. It has nothing to do with money but more about the junk being sold. I don’t buy any of that stuff for my kids during the year and Valentine’s Day will not be an exception. Plus, I am teaching my kids that they don’t need to be given chocolate or gifts on  day to feel loved. T h e y   a r e   l o v e d   a l l   o f   t h e   t i m e.

Alright. My kids do eat candy once in a while but I make sure it is organic and made with few ingredients. There is nothing wrong with the occasional treat. But I make sure that the threat is not filled with dangerous ingredients.

The same rule applies with dessert. Ice cream is a staple at our house. Since I don’t have an ice cream maker, I make sure to buy organic. I sometimes buy cake mixes but I get an organic brand. However, there is nothing better than a dessert made from scratch. It is fresher and it makes the house smells soooo delicious.

On Valentine’s Day, we had dinner over my sister-in-law’s house. And of course, there was a chocolate dessert involved. She made individual chocolate heart shape lava cakes. Yummy!!! We ate those warm and they were soooo good.

I had also made my favorite treat that day and brought it over for us to have too………………………..R i c e  K r i s p i  e   t r e a t s. Growing up, it was my favorite. And still is. I could possibly eat the entire batch when I make them.

They are quick and easy to make. Not the healthiest but still quick and easy. Butter, cereal, and marshmallows are the only ingredients needed. Plus, there is no baking involved.

As it is, this treat is filled with sugar so make sure to buy organic cereal and marshmallows so the ingredients they are made of are not toxic, adding to the non healthy factor. I love the organic marshmallows that you can find at WholeFoods. My regular grocery store carries a lot of organic food items that are less expensive than Whole Foods, brand for brand, but it doesn’t carry organic marshmallows. Maybe it does and it is not in the natural food aisle. But I checked many aisles without any luck. Regular or chocolate rice cereal can also be used.

You have to first melt the butter in a large pot. Then add the marshmallows to the melted butter and melt them at low heat. Remove from heat and add the cereal and mix well.

I prefer lining the dish with wax paper so the rice krispie treats don’t stick to it. Add the mixture to an 8×8 or 9×9 dish lined with was paper. and press down the mixture to even it out using a piece of wax paper between your hand and the mixture. And voila!!!! Let cool a little before cutting.

Ingredients
  • 4 TBS of Butter
  • 10 Cups of mini marshmallows
  • 7 cups of Rice Krispie Cereal - It is the whole box of Whole Foods brand
Instructions
  1. Line a 8x8 or 9x9 pan with wax paper
  2. In a large pot, melt butter over low heat
  3. Once the butter is melted, add 8 cups of marshmallows and stir constantly
  4. Once marshmallows have melted, remove from heat and stir in cereal until coated
  5. Once coated, stir in the remaining 2 cups of marshmallows
  6. Pour mixture into the lined pan and press in evenly using a piece of wax paper in between the rice krispies mixture and your hand
  7. Let it cool a little before cutting into squares.
