BBQ Pork in Crock Pot

Another great crock pot recipe. My crock pot saves me on days the kids have football or lacrosse practice. And this is one of their favorite as it is very tasty, not too spicy (I had to adjust the recipe for that), and the meat is very moist. I have issues with my gallbladder when I eat a lot of fatty food so I try to limit my pork and red meat intake, especially when cooked in the crock pot. However, if it wasn’t up to me, I would have to make this recipe on a weekly basis. Because not only everyone loves it, but leftovers are great in a sandwich too. Use organic ingredients whenever possible.

Ingredients
  • 3-3.5 lbs of pork shoulder, cut in half (My Whole Foods doesn't have that cut of pork very often so I substitute with the butt or the ribs. Works just fine)1/4 tsp of cayenne pepper (add more if you think you can handle the heat)
  • 1 onion
  • ½ tsp of thyme
  • 1 tsp of garlic powder
  • 2 tbsp of salt
  • 2 tsp of black pepper
  • 2 tbsp of olive oil
  • 3 tbsp of paprika
  • ¼ cup of red wine vinegar
  • ½ cup of honey
Instructions
  1. Place all dry ingredients in a bowl and mix well.
  2. Pour in the honey, vinegar, and oil to form a paste.
  3. Place the onion at the bottom of the slow cooker. I sometimes slice it or cut it in 4.
  4. Top the onion with the pork then pour the honey paste all over it covering all sides. It is okay to have some drip at the bottom.
  5. Cook on low for 7-8 hours or until the meat is tender enough to be shredded with a fork.
