Sesame Chicken in Crock Pot

I will never say it enough, crock pots are busy moms’ best friend. Don’t be afraid to use it. You don’t have to go fancy and buy an expensive one, you can spend $20 on one and it will do the trick. Unless you don’t work from home, you might one to invest in a programmable one. Otherwise, no need to go digital.

This recipe was given to me by a neighbor. She actually gave me my first two crock pot recipes. So yummy, even the pickiest eater will love this one. It takes about ten minutes to get everything prepped and then leave it to the crock pot to do the rest. What’s not to like? 

Sesame Chicken in Crock Pot

Ingredients
  • 6-8 boneless, skinless chicken thighs (about 2 pounds) - when using the thigh, the meat will most likely stay moist
  • Salt and pepper
  • 2 cloves of minced garlic
  • ¼ cup of ketchup
  • ½ cup of diced onion
  • ½ cup of honey
  • ½ cup of low-sodium soy sauce
  • 2 tbsp of olive oil
  • ¼ tsp of red pepper flakes
  • To thicken sauce:
  • 4 tsp of cornstarch or any other starch available
  • ⅓ cup of water
  • Garnishing:
  • ½ tbsp (or more) of sesame seeds
  • 3 scallions, chopped
Instructions
  1. Place chicken in crock pot and lightly season both sides with salt and pepper.
  2. In a medium bowl, combine onion, garlic, honey, ketchup, soy sauce, oil, and red pepper flakes. Pour over chicken.
  3. Cook on low for 3-4 hours, or high for 2 hours.
  4. ***Optional*** Remove chicken to a cutting board, leaving sauce.
  5. Shred chicken into bite-sized pieces; set aside.
  6. In a small bowl, dissolve the cornstarch in ⅓ cup water; add to crock pot. Stir to combine with sauce. Cover and cook sauce on high for 10 more minutes, or until slightly thickened.
  7. Add chicken back to crock pot.
  8. Once plated, sprinkle chicken evenly with sesame seeds and chopped scallions.
Notes
Serve with your favorite rice or quinoa.

Use organic ingredients whenever possible.
