Bok choy is one vegetable that I haven’t experimented with but only tried in stir fry. The recipe below is quick, simple and great. Use organic ingredients whenever possible.
Bok Choy Stir Fry

Ingredients
- 1.25 lbs of stir fry steak
- Bok choy quartered (you can also use baby bok choy) - I sometimes add a sweet onion with the bok choy
- 1 tbsp of coconut oil
- Salt & pepper
- ¼ cup of gluten free soy sauce
- 1 tbsp of ground ginger
- 1 tbsp of brown sugar
- 2 tbsp of rice vinegar
Instructions
- Season steak with salt & pepper.
- Heat oil. Cook steak turning often for 1-2 minutes or until cooked
- Wipe out skillet.
- Add bok choy + ¼ cup of water. Cover skillet and simmer the bok choy for about 2-3 minutes.
- Meanwhile, in a bowl, mix the soy sauce, vinegar, ginger, and sugar.
- Then add sauce to bok choy and bring to a boil.
- Add steak and accumulated juices. Cook tossing until heated through for about 1-2 minutes.
- Serve over rice or rice noodles. I either use brown rice, jasmine rice, or basmati rice.
