Pasta with Turkey Sausage, Sun Dried Tomatoes and Spinach

I hear a lot of “I don’t have time to cook meals when I get home from work” which is the reason people revert to meals from the  frozen isle or take out. Even today, there is no reason to not cook a home-cooked meal. This recipe is quick and simple. Don’t forget to use organic ingredients whenever possible.

Pasta with Turkey Sausage, Sun Dried Tomatoes and Spinach
 
Ingredients
  • 1 lbs turkey-style turkey sausage, casings removed - you can substitute with Italian but don't forget to drain the fat before adding the pasta...and don't add oil if you cook with non-stick pan
  • 12 ounces (about 3.5c) penne pasta - or any other pasta - if using gluten free pasta, cooking time and fluid might vary
  • 1 (6-ounce) bag baby spinach - you can also use steamed broccoli instead of spinach
  • 3 medium garlic cloves, minced finely
  • ½ tsp of salt
  • 1 tbsp coconut oil
  • ¾ cup of grated Parmesan cheese
  • 3 cups of water
  • 3 cup of low-sodium chicken broth
  • Optional -- ½c oil-packed sun-dried tomatoes, rinsed and chopped fine - I like to use the ones that are not oil packed and are in a bag. Please note that the picture above doesn't feature sun-dried tomatoes as the turkey sausage I used this time had some in it
Instructions
  1. Heat the oil in a 12-inch non-stick skillet over medium heat until hot and add in the sausage. Cook until lightly browned and no longer pink, about 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.
  2. Stir in the water, broth, sun-dried tomatoes, and ½ teaspoon salt, then add in the pasta. Increase the heat to medium-high and cook at a strong simmer, stirring often, until the pasta is tender and the liquid has thickened, about 15-18 minutes (if you find the liquid is absorbing too quickly and the pasta is still under cooked, add a bit more water in small amounts until the pasta is cooked thoroughly).
  3. Stir in the spinach, a handful at a time, and cook until wilted. Off the heat, stir in the cheese. Season with salt and pepper to taste and serve immediately.
