The Majic of Goji Berries

Today we are going to explore Goji berries. You’ve probably seen these little red devils popping up more and more frequently in recipes and in the aisles of your grocery stores.

What is a Goji berry?

The Goji berry, also called the wolfberry, is a bright orange-red berry that comes from a shrub that’s native to China. Although relatively new to the U.S. market, Goji berries have been part of Asian herbal medicine for over 5,000 years. Loaded with beta carotene, they are great for your skin. They are packed full of antioxidants, vitamin C, fiber, and over 20 trace minerals making them a “SUPERFOOD” powerhouse.  Treat Goji berries like a dried fruit.  Toss them in a salad, add them to your trail mix,  oatmeal, or even yogurt.  They pair very well with grains like oats, nuts like walnuts and fruits like strawberries.

Goji berries could interact with some drugs. If you take warfarin (a blood thinner), you may want to avoid goji berries. Goji berries may also interact with diabetes drugs and blood pressure drugs, so talk with your doctor first.

Otherwise, it’s probably safe to eat Goji berries in moderation. Below is a very yummy taco salad with mango-Goji salsa.

Ingredients
  • 2 large ripe mangos, peeled and diced
  • 2 tsp of Goji berries
  • 2 green onions, white and green parts thinly sliced
  • 1 poblano pepper, minced
  • ½ tsp camu powder
  • 2 tsp maple syrup
  • zest and juice of 1 Lime
  • 1 large avocado, peeled and diced
  • ½ lb of ground turkey
  • ¼ tsp chipotle powder - if you cannot find it at the store you can make your own by drying 3 lbs of jalapeno peppers at 125 degrees for at least three hours on the outdoor grill. Make sure they are cut in half and put them directly on the oven grill. Cool then grind in food processor. Store in air tight container.
  • ¼ tsp cinnamon powder
  • 2 tbsp coconut oil
  • ½ cup fresh cilantro leaves
  • 10-12 large butter lettuce leaves (if not using taco shells or tortillas)
  • Pink Himalaya salt and freshly grounded black pepper
Instructions
  1. Salsa -
  2. In a mixing bowl, toss the mango, Goji berries, green onions, poblano pepper, camu powder, maple syrup, lime zest and juice plus ½ teaspoon salt together. Add the avocado and gently fold in. Refrigerate for a minimum of 1 hour.
  3. In a separate bowl, add the chipotle and cinnamon powders, and season with salt and black pepper. Mix to combine.
  4. Heat the oil in a medium pan over medium-high heat. Once hot, add the ground turkey mixture and the spices. Cook, stirring frequently, for 6-7 minutes, until spices begin to brown and ground turkey is heated through. Adjust seasonings if needed, then remove from pan and transfer back to a bowl.
  5. To assemble tacos, lay a lettuce leaf curly-side up on a flat surface. Place a spoonful or two of the ground turkey at the center of the lettuce wrap, then spoon a generous amount of the mango salsa on top and sprinkle with cilantro leaves. Repeat with reaming leaves. Serve warm or cool.
